If I have a sore throat, fine. But otherwise I'll stick with solid foods please and thank you.
But within the past year, I've discovered that certain soups are absolutely, positively delicious, like corn chowder or chicken tortilla soup. mmmmm....mighty tasty.
So since I've comfortably succeeded with those soups I thought I would try my hand at the infamous Chicken Soup.
It's been a sort of rough day (Hence the endless tweets about Food Network), and I thought, "You know what always makes people feel better? Chicken soup."
But here's a few tips on how to, in my mind, make the perfect-o chicken soup-o...
1. Don't start with that nasty pre-made broth.
I made some crockpot chicken the other day and man....it was good. Very garlicky and oniony- which is exactly how all things should be in my mind.
So after we ate the chicken...I put a bunch of water in the crockpot, stuck the bones back in and let it sit on low for like 24 hours.
2. Use the veggies you want, not what's typical.
Forrrr example....I don't like celery very much...I don't mind it raw...but I really can't stand it cooked. And usually there's celery in soup...but I omitted such things from my soup...instead I used broccoli, cauliflower, and carrots. mmm
3. Roast the veggies first!
Put a wee bit of olive oil and chopped onion in the bottom of your soup pot and then throw the veggies over top, BEFORE you add the chicken stock.
I didn't cook them all the way through but at least got a little of the flavor onto the pan.
4. Use fresh herbs.
I went out back to my little herb garden jungle and grabbed a few sprigs of rosemary.
REASON WHY THIS POST IS SHORT:
I was working on it and something went funky with blogger and it killed pretty much my whole post. I didn't have the motivation or the time to rewrite the entire post. Use your imagination to fill in what I would have said about cooked veggies or garden jungle gardens.
