peanut butter chocolate granola bars

In less than 24 hours I'm going to board a plane. Since I'm not a huge fan of airport food or just airports in general, I usually bring some snacks. Somehow, granola bars are an airplane-riding-snack staple. Wouldn't you say?

Instead of going out and buying granola bars with who knows what inside, I decided to make my own.

  • 2 cups old-fashioned oats
  • 3/4 cup packed brown sugar
  • 1/2 cup wheat germ
  • 3/4 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 cup of peanut butter
  • 1/2 cup of chocolate chips
  • 1/2 cup honey
  • 1 egg, beaten
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
Preheat the oven to 350 degrees. Mix all the dry ingredients together in a large bowl (oats, sugar, wheat germ, cinnamon, flour, and salt).
Make a little well in the dry ingredients where you can pour in the rest of the ingredients. Now, and this is the fun part, get in there with your hands. Mix it all together.

In a super-greased up 9 x 13 pan put the granola mix in, giving about an inch between the side of the pan and the granola bars. Bake for 10-15 minutes or until the sides start turning brown.

Let the bars cool for about 5 minutes, then cut into bar shapes. After the bars have completely cooled, individually wrap the bars with plastic wrap. Serves about 12-20 depending on the size of the bars.
