However, I felt a keen desire to bake some cookies. Plus an even keener desire to blog about 'em.
I didn't want to do boring ole' chocolate chip, even though those are super fun. Nope, I decided to try S'mores cookies. I had tried them last summer for the first time and thought they were not only a perfect summer treat, but the cure for my HUGE sweet tooth. (notice that I wrote huge in all caps to accentuate just how huge it is)
They turned out an almost smashing success. I say "almost" because the first batch turned out a little overdone so, for fear of burning the life out of 'em, I didn't stick them back in the oven after putting the marshmallow and chocolate on top.
The second and third round went pretty darn well if I do say so myself.
Here's the recipe (courtesy of: bakedperfection.com):
1 1/2 cups all purpose flour (I used about a half cup more than called for since the dough was a bit sticky)
1 cup graham cracker crumbs (Roughly crunched up grahams work too)
1 teaspoon baking soda1 cup graham cracker crumbs (Roughly crunched up grahams work too)
1 teaspoon salt
1 dash of cinnamon
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs2 cups (that's about one bag) miniature chocolate chips (they can be regular sized or- if you're feeling like an extra chore, chop some Hershey bars and put that in the cookie dough instead)
1 1/2 cups mini marshmallows
2 Hershey bars, chopped
1. After preheating the oven to 375 (Or 325 for convection ovens), mix together the flour, graham cracker crumbs, soda, salt, and cinnamon.
2. In a separate bowl beat together the butter, sugars, extract, and eggs. (The original recipe says to beat the eggs separately after the butter, sugars, and extract- Well, ok. If you so desire. But I don't really see the need to put yourself through the extra step)
3. Slowly add in the dry ingredients to your wet ingredients.
4. Throw in your choc. chips and stir.
5. Drop your dough in roughly round, orderly blobs on an ungreased cookie sheet.
6. Bake cookies on the top rack for 6-8 minutes. This is the part that messed me up at first. If you have a convection oven or just something that is super powerful I would turn down the heat and the time. You want the cookies to still be gooey and uncooked on top.
7. In that gooey goodness press a couple pieces of Hershey bar and marshmallow.
8. Put the cookies back in the oven for another 2-4 minutes. Until cooked and the chocolate and marshmallow have melted into a delicious puddle on top of the cookie.
9. Cool them for a couple minutes on the baking sheet before transferring the cookie to a cooling rack.
